Ruby Roman's origins began in 1995, when grape farmers in Ishikawa Prefecture appealed to the Provincial Agricultural Research Center to create a new, more productive grape variety. 400 large red vines were tested and started to bear fruit after 2 years. However, of the 400 vines, only 4 are specifically developed to meet farmer expectations.

Over the next 14 years, the researchers refined the new grape variety developed from the first four successful vines. They are constantly improving the size, taste and color to gradually create today's Ruby Roman grape. It can be said that Ruby Roman became the agricultural treasure of Ishikawa Prefecture.

In 2008, shortly after its launch on the market, Ruby Roman grape varieties quickly became an international phenomenon. The major newspapers were all amazed at the heavenly price of this grape. A regular bunch weighing 700 grams sells for 10,000 yen ($ 910), or $ 26 per grape. At that time, Ruby Roman was recognized as the most expensive grape in the world.

Although the name Ruby Roman is used to describe many different grapes, in reality, each cluster must meet very strict standards to deserve the aforementioned price. For example, each grape in the cluster must weigh at least 20 grams and have a sugar content of at least 18%.

There is also a higher grade Ruby Roman grape, which is more stringent in standard. To be granted a Premium label, the Ruby Roman grape must weigh more than 30 grams and the whole bunch must weigh at least 700 grams. In other words, they must be perfect.

Because of its excellent quality and limited quantity, Ruby Roman grapes are difficult to find. Most of the available bunches are sold through auction. The type granted with the Premium Ruby Rose label is even more rare. In 2010, only 6 bunches of premium grapes were sold. There were no beams that met the standard in 2011.
