Wine connoisseurs often recommend, never store long champagne in the refrigerator. However, scientists have discovered that this concept is completely wrong.

It has long been believed that the air in the refrigerator is too dry, not suitable to store foamy wines. The light and vibrations of the engine inside the refrigerator are also thought to ruin champagne.

However, a research team from the University of Barcelona (Spain) conducted the tests and found the opposite. They found that storing champagne in the refrigerator compartment, at 4 degrees Celsius would prevent champagne from developing a discolored compound called 5-HMF , causing the wine to fail.

The team tested bottles of wine stored for two years and looked for 5-HMF compounds at different temperatures in normal rooms, wine cellars and refrigerators. Results showed that champagne stored in the refrigerator almost completely avoided discoloration.

According to Journal of Agricultural and Food Chemistry , alcohol manufacturers now detect discoloration of foamy products by measuring their light absorption.

Researchers conclude that preserving champagne at 4 degrees Celsius in the refrigerator not only preserves the flavor and bubbling of this drink, but also helps extend its life. The same holds true for prosecco and cava wines, drinks that should not be stored in wine cellar at or below room temperature.

However, the new study supports the notion that champagne bottles should not be stored in an upright position, as it may cause cork to shrink and allow external oxygen to enter.
