Coffee flavor originates from mushrooms
Mushrooms are the secret to making delicious coffee, according to research by Dr. Martha Taniwaki of the Brazilian Food Technology Institute.
As the first researcher to identify fungi that help coffee with special flavors, Dr. Taniwaki said the properties of coffee beans determine a part of the flavor and the types of mushrooms that contribute to the creation of many types of coffee. own quality approval.
The team collected raw coffee beans from farms in Sao Paulo and Minas Gerais in Brazil, cleaned, sealed for 7 days and separated the fungi. They then roasted, starred, mixed and drank the samples to evaluate the shape, aroma, sour taste, bitterness, harshness and sweetness. As a result, they found that mushrooms appear naturally inside coffee beans and combine with the regional properties created by soil, climate and moisture. While mushrooms taste delicious without harming health, some other types can have toxins and often produce a stench, smells of smoke, wood and yeast.
Dr Tanawaki said the team focused on separating different fungi and finding out how they were metabolized. This finding can be used to produce many types of coffee with special flavors according to specific tastes.
