Inventing starch helps prevent obesity

Recently a group of scientists from the Center for Advanced Research (Cinvestav) of the Mexican National Council of Science and Technology (Conacyt) has successfully developed an enhanced starch capable of preventing obesity. , diabetes and cardiovascular diseases.

Researcher Fernando Martínez Bustos, research project leader, said that after being mixed with some types of yogurt and appetizers, the starch-based product was put to the test and yielded positive results.

The ability to prevent obesity of most groups of volunteers who consume the product has been significantly improved, thanks to its similar function as fiber.

Dr. Bustos said that in order to produce this new product, Mexico has a rich source of natural materials, available in nature, such as starch of nuts, and the cost of mixing this fortified starch into the foods are not high, allowing consumers easy access. In the near future, this type of starch will be put into mass production and consumed in the domestic market.

The fortified starch product has won the Third Prize of Food Science and Technology Award - 33th Mexican Food.
