Why does the food on the plane taste tasteless?
American scientists have discovered noise is the main reason that passengers feel the food on the plane is not delicious.
Explanation of the unflavoring taste of food on the plane
In the study conducted by scientists at Cornell University (USA), 48 volunteers tasted the difference of 5 basic tastes in a noisy environment simulating the passenger compartment on aircraft and in quiet environment.
Scientists have found that the loud noise environment on airplanes does not affect or increase the taste of sweet, meaty foods, such as tomatoes. Salty, sour or spicy tastes are not affected by noise. But for sweetness , the team found noise that made sweet food taste lighter .
'Our research confirms that in a noisy environment, our taste buds are hurt, ' said researcher Robin Dando, head of research. 'While the intensity of the sweetness is reduced, the intensity of the sweet taste increases in the noisy environment'.
The team believes that the effect of noise on the taste may be due to irritation of the atrial nerves in the middle ear.
Research can help professionals improve the taste of food on airplanes by choosing foods that are more noise-friendly.
Earlier, German airline Lufthansa advised passengers to drink lots of tomato juice on board. The airline conducted a separate study showing the pressure in the passenger compartment increased the delicious taste of tomato juice.
