How to detect fake mink coffee

Mink coffee is much more expensive than regular coffee, so many people use chemicals to create fake mink coffee. Now scientists have found a way to detect fake mink coffee.

Ferrets eat berries and then follow the excretory path. Next coffee beans are cleaned, fermented, dried, roasted and ground. This type of coffee has a very high price and is usually produced in Southeast Asian countries.

In this study, scientists from Eiichiro Fukusaki University (Japan) measured acid content in coffee samples such as citric acid, maleic acid and the ratio of inositol and pyrogluramic acid.

They found that mink feces alter the concentration of these acids in coffee beans . The parameters vary greatly between regular coffee or ferret coffee with real mink.

It is a chemical sign to distinguish. Scientists will measure the concentration of acids in the coffee sample to know whether it is real mink or fake mink due to the use of chemicals.

Segall, a scientist who did not participate in the study, said: 'This is the first work to study this issue'.
