So, what causes ooblecks to transform from solid to liquid and vice versa?

According to experts, it is due to the interaction between particle composition and particle size. Specifically, when under the influence of force, the distance between the corn flour particles in the mixture changes. At the bearing position, the particles bunch, forming a cluster shaped like a crystal, making the oobleck more solid.
