Discovering new rice varieties with antioxidant capacity

Four new varieties of rice in Afghanistan have been researched by Vietnamese scientists to find a high ability to inhibit oxygen and protein and lipid nutrition.

The new study was conducted by Vietnamese scientists at Hiroshima University, the Agricultural Research Institute and Nguyen Tat Thanh University in Vietnam, in collaboration with Afghanistan and published on MDPI's Agriculture magazine on August 1. .

Four typical rice varieties grown in Afghanistan include: Attai-1, Jalalabad-14, Shishambagh-14 and Zodrass . The scientists conducted a cross-sectional examination of the rice grain using a scanning electron microscope. The results show that, not only are the antioxidant advantages, these 4 rice varieties have outstanding advantages in grain yield and grain quality. Of which Jalalabad rice variety - 14 contains the highest amount of oxidants, Attai-1 has lower levels of amyloza, protein and lipid than Jalalabad - 14.

The scientists applied DPPH and ABTS method (specialized chemical for oxidation test) to test the antioxidant capacity of these 4 rice varieties. Results showed that Jalalabad - 14 rice had the highest antioxidant index of 2574 µg / mL and 2970 µg / mL, higher than the index of germinated rice and cracked rice (in the ethyl acetate segment), ranked behind are Zodrass, Shishambagh -14 and Attai - 1.
