A study by the University of Wisconsin also showed that bacteria including salmonella (the culprit causing diarrhea) do not survive on a wooden cutting board when left overnight. However, this bacterium will be replicated and developed on plastic cutting boards.

Experts also say that people who use plastic cutting boards are at higher risk of disease than wooden cutting boards.

When you see your cutting board has many dents and grooves , replace the new cutting board immediately. Because the dent is the place where the bacteria cause disease.

If you want to be safe, you should only use plastic cutting boards to cut raw meat or foods that will be cooked at high temperatures. A wooden cutting board should be used to cut cooked food and raw or fruit vegetables.
