Prof. Dr. Nguyen Thi Ngoc Tu - Head of Pharmaceutical Polymer (Institute of Chemistry of Vietnam Academy of Science and Technology), said in July 2006 Institute of Chemistry and Public Thang Long Pharmaceutical - Foodstuff Joint Stock Company will produce the first batch of Chitofoood additives to market.
Chitofoood is a water-soluble powdered additive , derived from nature to completely replace borax in food processing and preservation.
Chitofood produced from shrimp shells and crab shells. Chitofood additives have the same effects as borax but are safe and non-toxic to humans. In particular, this additive has high antifungal, antibacterial properties so it keeps the food damaged, increased the toughness, brittle, not viscous, has the same price as the synthetic chemicals but the dose is less than that's cheaper.
Chitofood works for food groups such as rolls, rolls, canned meat, nem, noodles, noodles, instant noodles, filter cakes, ice cream, milk sour, biscuits, cream rolls and wrappers for cold food like sausages.
In 2006, scientists will transfer this production technology to Thang Long Pharmaceutical - Foodstuff Joint Stock Company for industrial production.
It is expected that each year, the factory will produce about 100 tons of Chitofood.
