Bacterial C. sakazakii may be present in baby formula and other fortified foods. Cases of C. sakazakii infection are rare, but cause blood poisoning, leading to life-threatening meningitis cases.

According to research leader Xiaonan Lu, the compounds in garlic can be used to prevent the risk of infection with C. sakazakii on food contact surfaces and in food production, from processing and closing. package.

Lu said in the process of producing dairy products, the pipeline is often cleaned with chemicals such as chlorine. With this new discovery, the team believes that manufacturers can use garlic compounds as a good treatment to replace chlorine when disinfecting pipes.
