Associate Professor - Dr. Vu Quang Manh, director of the Center for Biodiversity of Hanoi National University of Education, recounted an interesting experience about the 'flavor' of stink bugs.

During a business trip in Lang Son, Dr. Manh was introduced to a restaurant specializing in . insects by local colleagues. During the meal, there were three dishes brought out. The first is grasshoppers, the second is rice beetles (dragonfly larvae) and the third dish is . stink bugs.

According to Dr. Vu Quang Manh, stink bugs are brittle, greasy and fragrant. The characteristic pungent odor made the terrified person seem to have flown away, leaving no trace.

In the processing stages, live bugs are released into a pot of water mixed with salt. Irritated, they squirt out the glands from the body (the bug's self-defense reaction when felt threatened). The cooking process will decompose the remaining odor (organic compound).

'In principle, all stink bugs are edible. But the most common species are the bugs that live on longan and litchi trees. This is a species of stink bug that is large in size and can be said to be the . most foul of the family of stink bugs " , Dr. Vu Quang Manh said.

According to Dr. Manh, the species of stink bugs belong to the half-winged insect ( Hemiptera ). All species in this set carry a characteristic odor.
