The team collected raw coffee beans from farms in Sao Paulo and Minas Gerais in Brazil, cleaned, sealed for 7 days and separated the fungi. As a result, they found that mushrooms appear naturally inside coffee beans and combine with the regional properties created by soil, climate and moisture. Dr Tanawaki said the team focused on separating different fungi and finding out how they were metabolized. This finding can be used to produce many types of coffee with special flavors according to specific tastes.
