The researchers say rice has a high blood sugar index , which means that the body quickly converts the carbohydrate in rice into glucose. The glycemic index of 64 white rice on a 100-point scale ranks first among foods with a high blood sugar index.

Another study published by Prof. Shigeru Yamamoto, Director of the Center for Nutrition Research and Asian Culinary Culture, Jumoji University, Tokyo, Japan also demonstrated the link between the habit of eating white rice and diabetes.

Accordingly, the high-sugar diet of Vietnamese people is mainly white rice, which is the main reason for Vietnamese people with diabetes at high level, not genetic factors.

From this eating habit of Vietnamese people, about 70% of sugar energy increases the level of blood sugar response in Vietnam between the ages of 60-65, making the risk of diabetes increase.

According to the researchers, it is not possible to negate the health benefits that white rice brings, the body is indispensable or replaces the role of sugars that the foods provided include white rice.

However, to limit the risk of diabetes, a reasonable diet is needed, gradually reducing the amount of white rice used in meals. It is possible to use a combination of brown rice and sprouted rice to partially replace white rice to better control diabetes.

Using brown rice and germinated rice will reduce the level of postprandial blood sugar response than white rice . Moreover, brown rice and sprouted rice also have higher nutritional value than white rice and also reduce obesity.
