Talking with PV, Associate Prof. Dr. Tran Hong Con, Department of Chemistry, Hanoi National University, explained: "Liquid nitrogen is nitrogen in a liquid state at a very low temperature. In the market, liquid nitrogen is often sold. It is produced industrially by distilling liquid air segments, liquid nitrogen has a very low temperature, so when it comes out of the container it will evaporate and create smoke immediately. "

According to PGS Con, nitrogen is not toxic gas, they occupy 80% of the air so it has almost no effect on health. If the ratio of nitrogen is too high in the body, it can cause shock and paralysis. But the biggest problem of this gas is the coldness.

"Normally, when we eat and breathe, we also have this gas in our bodies. Liquid nitrogen gas is not toxic, but when we spray liquid nitrogen gas will be colder than normal ice cream . If it is too cold, it can cause cold burns. " , PGS Con said.

According to him, if the cloudy cream and cold smoke snack about -10 degrees Celsius can be harmful to the body . Many cases of coldness of about -20 degrees Celsius can cause burns to the lips immediately. PGS Con noted, nitrogen gas burns often burn very deeply.

About smoke rising in the dish, the expert said this is a normal feature of nitrogen gas. So people still use it to perform, create smoke on stage. This liquid gas is often used for cooling to transport food, preserve sperm and eggs, samples, biological products .

According to Assoc. Con, people should not be too worried about these dishes. To ensure safety, when eating, we should control the coldness of the ice cream, preferably only when the smoke has melted.
