In a study recently published in the scientific journal Current Developments in Nutrition, a group of authors from the University of Arizona (USA) showed that some types of bread can help you reduce the risk of some common cancers, such as breast cancer or colon cancer.
American scientists reviewed aggregated data of 1.88 million people from studies and statistics from the US, Europe and Japan.

Different types of breads were analyzed including whole grain, white, whole rye, low- or high-fiber whole wheat, crusty bread, etc.
One dataset that looked only at men found that those who ate the most non-white bread had a 21% lower risk of dying from cancer in the future.
The most obvious effect on colon cancer: For each slice of whole-grain rye bread or other whole-grain bread, the risk of colon cancer is reduced by 4-12%.
For a separate study on women, consuming high-fiber bread reduced the risk of breast cancer by 25%.
High-fiber breads are usually made with whole grains or have added fiber-rich foods like beans, nuts, and vegetables.
According to the authors, bread is one of the most consumed foods worldwide, rich in nutrients, but some people are also concerned that this is a baked product when processed, so eating a lot is not good.
The results showed that the amount of antioxidants, fiber, and bioactive components in whole-grain or high-fiber breads can completely overwhelm the compounds that can be produced during the baking process, making it a healthy source of starch.
Some previous studies have also shown that other sources of whole grain starch or rich in fiber also help reduce the risk of cancer, such as brown rice, whole grain noodles, oats, potatoes.
These starch sources are also low on the glycemic index (GI), making them suitable for people with metabolic problems, such as diabetes.
