Scientists have created a new exotic cauliflower whose original color has been replaced by a variety of colors such as orange, purple and green.
These colorful cauliflower tastes like a normal species but gives a rich color to the meal. Some scientists also claim that cauliflower is more beneficial for consumers' health.
Andrew Coker, a spokesman for Syngenta plant company in Europe, stressed that colorful cauliflowers are not the result of genetic modification but were born after decades of selective breeding. They still retain color after being processed. Early results showed that the new cauliflower is very popular with consumers.
This is not the first time people have changed the color of vegetables. In the 17th century, carrots in European countries were often white, yellow and purple. Then orange was replaced by Dutch growers to honor the national color.
According to scientists, orange cauliflower has more vitamin A content, which helps to beautify the skin. Purple from anthocyanin also prevents heart disease.
