Washing vegetables needs to go through certain steps to ensure that they are clean of dirt and chemicals, but do not lose vitamins that are good for health.

Doctor Doan Thi Anh Dao, Deputy Department of Nutrition, Thanh Nhan Hospital (Hanoi), said that in the daily diet, vegetables, tubers and fruits play a particularly important role. They provide many vitamins, pectin substances and organic acids.

The operations for preliminary processing and processing are very important. But some people's habits have worn out the vitamins and fiber in vegetables. At the same time, the health of the eater is also affected.

According to Dr. Dao, we should have certain procedures. First, we need to remove the damaged, wilted, shriveled parts… With tools, we need to make sure they are clean, including the water source, the basket, the pot, even the hands. Because when dirty hands touch washed vegetables, they will become infected.

To clean vegetables, people can rinse them under clean tap water or soak them in diluted salt water. Some people often use products that are recommended in the market to reduce pesticides and harmful chemicals in fruits and vegetables.

Salt has antiseptic properties, helping to wash away the dirty parts of vegetables. However, soaking in water will have penetration into the vegetables. Soaking for too long will increase the wilt of the leaves.

'In a basin of about 10 liters of water, you should only add about 5 grams of salt to soak for about 5 to 10 minutes. After that, you rinse with clean water to minimize the amount of salt in vegetables. This helps to ensure that vegetables and fruits are not absorbed by too high a concentration of salt , ' Dr Dao said.

At the same time, we should only salt with products that are used immediately and should not be left for too long.

According to Dr. Dao, many people who soak vegetables in salt water are very emotional, follow the habit. Typically, pick up a handful of salt and put it in a small bowl of water and then soak the vegetables. They often think that the denser the better, then take out the vegetables to eat or process.

This is a mistake many people are making, inadvertently causing more salt to enter the body - the cause of many non-communicable diseases such as blood pressure and heart disease.
