Nicola and her colleagues have been researching for months and developing a unique dish in the hope of creating something unprecedented.

This name may cause some misunderstanding because these fried foods are actually made from baked cassava first and then fried. However, there are also several air elements involved in the cooking process, or at least a component of air - ozone.

The chef shared that it was not simply "frying air" . First, the cook must create "clouds" with the main ingredient of cassava flour . They will then crispy "cloud" and let it dry.

The most special process of creating "fried air" balls is to bring the "cloud" into an airtight container and then scour the air containing ozone molecules for 10 minutes, which gives the dishes a special scent. After pumping in the air, the 'fried air' will be displayed on cotton candy, making them look like floating clouds.
