Explain the cause of cheese with holes
According to the BBC, Agroscope scientists, the Swiss National Agricultural Institute , said that "ultra-small dry grass" had fallen into the milk collecting bucket, and developed into large pores inside ripe cheese.

This process only affects some Swiss cheeses such as Emmental or Appenzell.
This finding explains why Swiss cheese has suffered less losses in the last 15 years. The modern milking method has limited the ability of hay seeds to fall into milk containers. The scientists reached the conclusion, after adding a small amount of dried grass seeds to milk, brewing it into cheese for more than 130 days.
No expert has spoken out against this conclusion. The view that bacteria make holes in cheeses dates back to 1917, according to the American scientist William Clark.
The cheese manufacturing industry calls the holes "cheese eyes ". Any type of cheese without eyes is considered "blind." There are thousands of types of cheese in the world, made from many different types of milk.
